make this

so this might not look too smashing in the photo because i'm far from pro, but you should try this easy recipe. add raisins, even if you hate them. this was adapted from the great cookbook by evan kleiman.

panino rustico

4 boneless chicken breasts, skin on
kosher salt and freshly ground black pepper
1 lemon
1/2 c extra-virgin olive oil
1/4 c balsamic vinegar
2 tbsp toasted pine nuts
1 tbsp raisins, plumped in hot water for 10 min, then drained
rolls
dijon mustard
arugula

preheat oven to 400. place chicken on baking sheet, skin up. bake for about 15 min, or till cooked through. remove from oven and cool.

when chicken has cooled, remove and discard skin. shred meat and place in a bowl. add salt and pepper to taste. zest lemon directly over shredded chicken. cut the zested lemon in half and squeeze the juice from one half over the chicken. add olive oil, balsamic, pine nuts, and raisins. stir to mix.

to assemble the panini, slather bottom of a roll with dijon mustard. spoon chicken salad and some of the juices onto the rolls and top with arugula and tops of rolls.

CHOW DOWN.
